Ingredients

  • 1 cup all-purpose flour

  • 2 1/4 tsp active yeast or instant yeast

  • 2 tsp warm water

  • 1 cup warm milk

  • 4 tsp unsalted butter at room temperature

  • 2 large eggs

  • â…“ cup granulated sugar

  • ¼ tsp salt

  • 1 tsp vanilla extract

  • ¼ tsp nutmeg powder (optional)

  • Oil for deep frying

For Coating:

  • For Sugar Coating:

    • ½ cup powdered sugar

  • For Chocolate Coating:

    • 750 gm dark chocolate

    • ½ cup milk

Preparation

To Make the Chocolate Coating:

Melt the chocolate in a double boiler, add the milk, and mix. Let it sit for 10 minutes. Mix well until you get a silky consistency.



How to prepare the donuts: 

Step 1: 

In a small bowl, mix yeast, warm milk, and 1 tsp sugar. Let it sit until frothy (about 10 minutes).


Step 2: Mixing the ingredients : Take a bowl, combine flour, sugar, salt, eggs, milk, butter, vanilla essence, and nutmeg powder. Mix well. Knead the dough for 10 minutes. It should be a little sticky for rising. If using a stand mixer, knead on slow speed for 5 minutes and then 7-10 minutes on a higher speed.


Step 3: Fermenting the dough: Grease a bowl with oil on all sides and add the dough. Now let the dough sit in a warm place to ferment. It’ll take about 2 hours until it doubles in size.


Step 4: Punch the dough to release air. Take it out from the bowl onto a flat surface. Dust some flour on the surface and roll out the dough equally. Make sure its not too thin, it should be 1m thickness to fluff up as we fry them. Once the dough is rolled, refrigerate the dough for 10 minutes. This will allow the cutting process to be easy and the dough doesnt stick to the cutter. 


Step 5: After 10 min, take the dough from the refrigerator and with the help of a cookie cutter cut the doughnuts to make donut shapes. Make sure to make the small hole in the middle allowing it to be hollow and circle in shape. 


Step 6: Now take a pan, add some oil for deep frying. Add the donuts gradually, donnot overload the pan allow room for the donuts to space out and cook evenly. Cook until golden brown. Remove it on a plate with a napkin spread out to soak any excess oil.


Step 7: Once the donuts have cooled, but still warm, dust the icing sugar generously. Alternatively, add the chocolate glaze ( see the below section to prepare the glaze) and some sprinklers of your choice. 


How to prepare chocolate glaze: 

For chocolate coating, add one nice quality dark chocolate. On a pan heat some water, now take another pan and add the chocolate and 50gm of butter. Place the chocolate pan over the water pan and let it melt gradually. This is called the double boil method. Once the chocolate has melted, mix well to combine the butter and the chocolate. And your chocolate glaze is ready.
